Steak with Chimichuri over Raw Kale Salad
Eating healthy is tastes amazing. I promise this recipe will blow your mind and really only takes 10 mins. Another great Friday Night dinner idea.
Steak:
1 sirloin steak (try and eat from Healthy Butcher/ Rowe Farms)
Sear it on a really hot pan 3 mins on each side max, make sure you season it before
Chimichurri:
Combine in a bowl and whisk…make this ahead of time for best results keep in fridge for 2 hours before to get the most flavour
1/4 cup Red Pepper
1/4 minced onion
1-2 cloves of minced garlic
1/4 cup quality olive oil
1/4 cup of red wine vinegar ( if you dont have that just splash some red wine)
1 tsp of smoked paprika
1/4 cup of chopped Fresh Italian Parsley
tbsp of freshly chopped orgeano (or dried)
salt + cracked black pepper
tbsp of red pepper flakes
Kale Salad
1 head of kale, cut off the stems, rinse and dry, put in a big bowl chopped up. Dress with a large wedge of lemon, use a fork to squish it to get all the juice out. Add good quality olive oil, couple tbsps i never measure. and rub the leaves with what you’ve just dressed the salad with so that the leaves become more whilted.
season with salt and peper and you’re done
ASSEMBLE:
Kale + warm sliced steak + then add a couple tbsps of Chimichurri
Fresh Tomato, Mozzarella Pizza with Fresh Basil & Spicy Soppressata
This is my favourite quick pizza. I personally hate olives but yet I’m Italian. But my girlfriend and I whipped this pizza up on a Friday night and she threw some olives on her half:)
100 grams of Spicy Sopressatta
Fresh Pizza Dough- Longos
Fresh Basil- tons
Homemade Tomato sauce + Tomato Paste
Fresh Mozzarella-good quality cheese not Kraft
Sliced Black Olives
Cinnamon French Toast with Pear and Toasted Pecans
All you need is Rye Bread, Cinnamon, pinch of Nutmeg, Egg, Pinch of salt
You can top this french toast with anything, blueberries and whipped cream but I went pear and pecan :)

Peanut butter oreo chocolate brownie
SALTED CRUNCHY PEANUT BUTTER COOKIES WITH DARK CHOCOLATE CHIPS
Oven: 350F
Mix wet ingridients:
1/2 cup butter
1 cup of brown sugar
1 egg
1 tsp of vanilla
1/2 cup peanut butter
Mix dry ingredients:
1 1/2 cups of whole wheat flour
1 tsp of baking soda
1/2 tsp of salt
Combine mixtures and add dark chocolate chips.
Scoup spoonfulls on the greased baking sheet and add pinch of sea salt on top of each cookie. Bake in the oven for 8-10 mins.
