FRESH PASTA WITH ROASTED EGGPLANT, ZUCCHINI ON SPINACH AND FRESH TOMATO SAUCE

This is my go to, mom used to make this quick meal during the week. Its very good for you, especially if you’re using a gluten free pasta and buying organic of course.

Directions:

1)in a skillet heat olive oil, toss in all your veggies, season with salt and pepper, and yes add the spinach. you should brown the onions eggplant and zucchini first and then add the spinach and tomatoes last

2) boil your salt water add in fresh pasta

3) mix it all together with fresh sauce

I use this zucchini,eggplant onion thing with fresh herbs and Parmesan cheese on flat breads, in pastas, in quinoa salads, basically a brilliant combo that is so versatile

GNOCCHI WITH ITALIAN SAUSAGE + SPINACH MOZZARELLA BASILICO + ALLA TOMATO VODKA SAUCE

One of my favourite recipes & so simple! You will scrape the bottom of your plate…my guest did that, no joke.
1) Boil a pot of good quality gnocchi if you don’t have time to make it. Don’t forget to salt your water.
2) Make your sauce, I used vodka sauce, you can use a simple marinara. Please don’t use Classico brand, dare I say Ragu!
3) In a skillet, saute onions + garlic in olive oil
4) Slice up the italian sausage that you got from the butcher. (get to know your butcher, antibiotic free is best!) Saute in the skillet until cooked through.
5) Add in your fresh herbs. Basilico + Oregano + good quality sea salt and crushed pepper flakes. Throw in your organic spinach (I like to remove the stems). Cook it down.
6) Toss in your Alla Vodka Tomato Sauce and your cooked gnocchi.
7) Simply shred some mozzarella & Parm over the top and cover let the cheese melt and let the flavours simmer and come together.

KALE BASILICO ALMOND PESTO FETTUCCINE WITH GARLIC BROCCOLI + GRANA PADANO

Are you getting enough greens? Pesto pasta is my favourite comfort food dishes I make. But this time I tried boosting up on Riboflavin ( found  in dark leafy greens) by throwing in some Kale & Broccoli. All you need is a food processor and presto!

But don’t forget, no pasta dish is complete without real Durum Semolina, Excellent Cheese and Garlic!

BASIL BUFFALO MOZZARELLA PENNE with PARMIGIANO-REGGIANO + OLIVE OIL

This is absolutely my favourite pasta dish, this is my comfort food. I usually make this Fridays when I’m feeling comfy at home drinking some vino. But promise me you will use excellent quality ingredients! Sometimes I add toasted pine nuts, cause man those kick it up a notch!

1) Boil the water, THEN put the pasta in, salt the water with sea salt

2) Promise you used good quality pasta, I used Barilla Penne

3) Cut up some FRESH basil

4) slice some peices of Santa Lucia Buffalo Mozzarella

5) grate fresh Parm

6) add the hot pasta onto the cheeses so they warm and are gooey :)

7) top with basil, season to taste

PASTA FAGIOLI WITH ROASTED GARLIC RAPINI

1)Boil strozzapreti pasta until al dante

2) brown onions, carrots, celery, garlic, rosemary and sage

3) add white or red kidney beans and cook 3-4 mins

4) with a fork mash 1/4 of the beans in the pot and add water, add pasta and cook until absorbed a bit 8-10 mins on low

5) mix in fresh grated Parmesan cheese and cracked pepper
